With the little self control I have, I do my best to avoid sweets. That pint of Ben and Jerry’s containing four servings and over 1000 calories is easily consumed in a night when no matter how many times I say “I’ll just have a bite.” But in honor of Valentines Days, I have decided to make some of my favorite cookies: cake-mix cookies. But, with a little twist. Instead of the oil and eggs the recipe calls for, I will be substituting yogurt and egg whites to cut back on fat and calories.
The traditional recipe is as follows:
1 box cake mix
1/2 c oil
2 eggs
Twisted Recipe:
1 box cake mix (Valentines funfetti)
1/2 cup non fat yogurt, plain or vanilla
1/2 cup egg whites
1. Mix all ingredients in a bowl until it forms a dough
2. Place rounded tablespoons on a baking sheet
3. Bake for 10 to 12 minutes in a preheated 325 degree oven
Yummy! The cookies will be soft and fluffy just as if you used oil and eggs just without the seven grams of fat and 60 calories the oil and eggs add. The twisted recipe makes 18 cookies with 100 calories and 2 grams of fat per cookie. With all that saved, you could even add a little frosting to the top. What the heck, it is Valentines Day!
